French Style Potato Salad
Potato Salad is a classic picnic & potluck staple! This version ditches the heavy mayo in favour of a tangy vinaigrette with just 4 ingredients. Even better - it makes great use of fresh garden herbs .
Mix and match what you have in abundance - make sure a bit of that is dill! Yum!
Ingredients
Salad
6-8 medium russet potato, scrubbed but not peeled
Salted water for boiling
1/2 -3/4 cup minced herbs - a combination of parsley, dill, basil, thyme, or other young leafy greens
1/2 medium sweet onion - finely diced
Dressing
1/3 cup olive oil
1/4 cup wine vinegar (white or red)
1 tbsp each regular & grainy Dijon mustard
Black pepper to taste
