Berry Shortcake Bars
No bake berry shortcake bars are the no-cook simple summer treat you're looking for! Vegan, dairy free, gluten free AND NOT yum free! (So say my kids)

3/4 c raw cashews
1/4 c almond flour
4 pitted medjool dates
2 tbsp coconut oil
1/4 tsp salt
BAR FILLING
1 3/4 c cashews
1/4 c cashew butter
3/4 c canned coconut milk
1/4 c coconut oil, softened
1/3 c maple syrup
2 tbsp lemon juice
1 tbsp vanilla extract
2 c sliced berries
