Farro Salad with herbs & walnuts

Makes 4 servings

Whole grains, berries, greens, walnuts - what do these all have in common? Yes they are all in this salad (well cherries or cranberries are) but they are also all foods linked with improved mental health. There is good evidence to support that what you eat not only helps your body but contributes to improved mood and management of conditions like anxiety and depression. If you need a mental ‘pick me up’ focus on including more plant based dishes, slow digesting whole grains, antioxidant rich berries and omega 3 rich choices like walnuts. Smaller portions of this salad would pair with cold water fatty fish - like salmon or trout - and you would have all 5 of the top foods for mental wellness on your plate.

Ingredients

3/4 cup farro

1 1/4 c water

2 stalks of celery, finely chopped

1 green onion, chopped

1/2 c each fresh parsley & basil, finely chopped

1/2 cup chopped walnuts, toasted

1/2 c dried tart cherries (or cranberries)

3 tablespoons of olive oil

2 tablespoons lemon juice

Salt and pepper to taste
