Spiced Chicken with dates

This simple and satisfying weeknight dish makes use of economical chicken thighs and adds a touch of ‘fancy’ with a delicious glaze based on dates and finished with spring herbs.

Add your favorite vegetable side such as spring snap peas or wilted spinach for a balanced dinner meal - enjoy!

Ingredients

12 skinless, boneless chicken thighs

salt & pepper

2 tsp paprika

1 tsp packed brown sugar

2-3 tbsp vegetable oil

3 shallots, sliced

6 Medjool dates, pitted & chopped

1/3 cup wine vinegar

3/4 cup low-sodium chicken broth

1/4 cup chopped fresh parsley or mint
