Beets brighten up traditional hummus with a fresh festive twist.
Ingredients
180 g/6 oz red beets
398 ml can chickpeas, drained & rinsed
1/3 cup tahini, well mixed
1/3 c fresh lemon juice
1/4 c ricotta cheese
1 clove garlic, minced
1 tsp salt
1/4 tsp pepper
1/4 tsp ground coriander
