Beets brighten up traditional hummus with a fresh festive twist.

Ingredients

  • 180 g/6 oz red beets

  • 398 ml can chickpeas, drained & rinsed

  • 1/3 cup tahini, well mixed

  • 1/3 c fresh lemon juice

  • 1/4 c ricotta cheese

  • 1 clove garlic, minced

  • 1 tsp salt

  • 1/4 tsp pepper

  • 1/4 tsp ground coriander
