Quinoa & Winter Fruit Salad
Whole grains such as quinoa are low glycemic index making them a great choice for providing energy that will sustain you through all you do in your busy day. This make-ahead salad (or side dish) is quick to prepare for a delicious grab and go lunch.
Ingredients
1 cup quinoa - tricolour or white
2 Tbsp lemon juice
2 Tbsp Oil - olive or similar
1/4 tsp salt
1/4 c loosely packed mint leaves
1/4 c loosely packed parsley leaves
2 pears - cored and chopped
1 cup pomegranate arils
