Turkey Stuffed Squash

Makes 4 servings

All your favorite fall flavours stuffed together in an edible bowl of comfort. Ground turkey and grains are seasoned just like holiday stuffing and accented with apples and cranberries. Fill a hollowed out squash, bake and enjoy!

Ingredients

  • 2 medium acorn squash, halved. Seeds & pulp removed.

  • 1 tbsp olive oil

  • 1 small onion, finely diced

  • 1 rib celery (optional), finely diced

  • 500 g lean ground turkey

  • 1 apple cored and diced

  • 1/4 c dried cranberries

  • 1 & 3/4 c cooked brown rice, barley or quinoa (*see tip)

  • 1 tsp each of dried rosemary, thyme, sage, black pepper

  • Salt to taste
