Two Bite Pinecone Brownies

Makes 14 portions

These easy no-bake, no added sugar chocolate treats are delicious and packed with heart healthy ingredients. Plus they are dressed and ready for a holiday party.

Ingredients

  • 1 cup pitted dates

  • 1 cup canned chickpeas, drained & rinsed

  • 1/4 c nut butter

  • 1/4 c cocoa powder

  • 1 tsp vanilla extract

  • 1/4 tsp salt

  • 1/2 cup walnuts

  • sliced almonds

  • 60g (2 oz) semisweet chocolate, melted

  • 2-3 tbsp whipping cream

Pre soak dates in enough warm water to cover for ~10 min. Drain

Combine all ingredients except walnuts & chocolate in a food processor. Pulse until a smooth dough forms. Add walnuts and pulse until just incorporated. Divide dough into 14 portions and roll into cone shaped forms.

Insert sliced almonds into dough in alternating pattern to resemble pinecone. Chill for 15-30 minutes

Melt chocolate in microwave, heating for 30 seconds at a time and stirring.

Stir in whipping cream until a liquid chocolate ganache is formed.

Dip into or drizzle the pinecone bites with melted chocolate. Chill until set & enjoy!
