Irish Inspired Power Bowls
Green barley, orange sweet potato, roasted mini cabbage (aka Brussels Sprouts) and curried lentils put a nutritious boost in your Nutrition Month and St Patrick’s Day.
Ingredients
For the Green Barley
3 Tbsp olive oil
1.5 cup barley
1/2 cup + 2.5 c broth 1.5 c baby spinach
1/2 c parsley
1 green onion
1 clove garlic
Roasted Veggies
1 lb Brussels sprouts halved
3 medium sweet potato peeled & cubed (0.5")
3 tbsp olive oil, divided
1/2 tsp each smoked paprika & chili powder salt and pepper to taste
For the Spiced lentils
1.5 c green lentils
3.5 c water
2 tsp curry powder,
1/2 tsp chili powder 1
tsp lime juice
salt and pepper to taste
Toppings & Such
Baby spinach or kale
Pumpkin seeds or Roasted Chick peas
Lemon or Lime wedges
Dressing of choice if desired
