Chocolate Oatmeal Snack Bites
These tempting chocolate bites are hiding a secret! They are packed with simple, fibre rich ingredients to satisfy your inner health nut and your sweet tooth. Bonus - no cooking required!
Ingredients
1/2 cup smooth nut-butter of your choice
1/4 cup honey
1 tsp vanilla extract
3 Tbsp cocoa powder
2-4 tsp water
1 cup large flake oats
3/4 cup shredded coconut - toasted optional
1/2 c ground flax seed
5-6 Tbsp semi sweet chocolate chips
In a mixing bowl, stir together nut butter, honey, vanilla and cocoa powder.
Thin mixture to a smooth consistency with 2-4 tsp water. Add all remaining ingredients. If mixture feels too dry, add any remaining water not yet added. Scoop with generous tablespoon and roll by hand into 24 balls. Place in air tight container and chill until set - about 15-30 minutes.
