Barley Porridge with Ham & Eggs

Ingredients
1/2 cup cider vinegar
1/2 cup water
3 cup low sodium chicken broth
2 Tbsp low sodium soy sauce
4 Tbsp olive oil
2 cup onion, diced
1/2 cup diced deli ham
2 cups pearl barley
4 large eggs
1 tsp salt (or to your taste)
1 green onion thinly sliced - for garnish
optional garnish - micro greens or chopped fresh herbs
