Barley Porridge with Ham & Eggs

Ingredients

  • 1/2 cup cider vinegar

  • 1/2 cup water

  • 3 cup low sodium chicken broth

  • 2 Tbsp low sodium soy sauce

  • 4 Tbsp olive oil

  • 2 cup onion, diced

  • 1/2 cup diced deli ham

  • 2 cups pearl barley

  • 4 large eggs

  • 1 tsp salt (or to your taste)

  • 1 green onion thinly sliced - for garnish

  • optional garnish - micro greens or chopped fresh herbs
