Citrus Fennel Salad
Oranges are a ray of sunshine on a cold day. This salad combines colourful blood oranges with Cara Cara's and mandarines with a simple vinaigrette and thin slices of fennel.
Ingredients
3 each blood oranges, Cara Cara oranges & mandarines, peeled, sliced
1/2 fennel bulb, core removed, thinly sliced (reserve fronds for garnish)
1 shallot, thinly sliced
1 avocado, sliced
Dressing
1/3 c olive oil
3 Tbsp white wine vinegar
1 tsp dijon mustard
1 Tbsp honey
Salt & Pepper to taste
