Citrus Fennel Salad

Oranges are a ray of sunshine on a cold day. This salad combines colourful blood oranges with Cara Cara's and mandarines with a simple vinaigrette and thin slices of fennel.

Ingredients

  • 3 each blood oranges, Cara Cara oranges & mandarines, peeled, sliced

  • 1/2 fennel bulb, core removed, thinly sliced (reserve fronds for garnish)

  • 1 shallot, thinly sliced

  • 1 avocado, sliced

Dressing

  • 1/3 c olive oil

  • 3 Tbsp white wine vinegar

  • 1 tsp dijon mustard

  • 1 Tbsp honey

  • Salt & Pepper to taste
