Quinoa Breakfast Jars
Meal Prep these whole grain, high protein jars for a grab and go breakfast (or snack). They include seven different plants - a great way to diversify your plant intake in one meal.
Ingredients
1/2 cup uncooked quinoa
1 cup water (makes 1 1/2 cups cooked)
1 Banana, ripe, mashed
2 tbsp Nut Butter
2 tbsp protein powder
1 cup milk
1 tbsp chia seeds
2 tsp maple syrup
1/4 tsp cinnamon
1/8 tsp nutmeg
1/2c blueberries plus additional for topping
