Quinoa Breakfast Jars

Meal Prep these whole grain, high protein jars for a grab and go breakfast (or snack). They include seven different plants - a great way to diversify your plant intake in one meal.

Ingredients

  • 1/2 cup uncooked quinoa

  • 1 cup water (makes 1 1/2 cups cooked)

  • 1 Banana, ripe, mashed

  • 2 tbsp Nut Butter

  • 2 tbsp protein powder

  • 1 cup milk

  • 1 tbsp chia seeds

  • 2 tsp maple syrup

  • 1/4 tsp cinnamon

  • 1/8 tsp nutmeg

  • 1/2c blueberries plus additional for topping
